recipe: chocolate mayonaise cake

I wanted to start off this week in the sweetest way possible so take a look at this pretty little birthday cake. It tastes just as good as it {hopefully} looks and was a great surprise for my brother's birthday the other week. The recipe is from the April 2010 issue of Bon Appétit and can be found here.
Special note: I adjusted the recipe a little bit to make two small 3-layer cakes.

I know it may sound weird to put mayonnaise in a cake but it replaces the oil and gives the cake an incredibly moist texture. It's seriously a great birthday cake and the frosting is amazing..full of lots of yummy butter. If you make it you're just going to have to overlook the health factor ;)

Sigh now my mouth is watering!

  12. My friend recently told me the chocolate cake at Portillo's is made with mayo and I was prettttty disgusted (I hate mayo). But...Portillo's cake is absolutely delicious so I bet yours is, too! Love the frosting and sprinkles!

  23. yeah, i had to do a double-take to be sure i read "mayonnaise." sounds strange, but that cake looks amazing! so i'd try it. once i have a kitchen with counters of course (you lucky girl!). :)

    and I can see how moist the myo makes it...BUT I can barely even stand the thought of mayonnaise:(

  94. I've been baking with mayonnaise for years! My mom used it in brownies when I was a kid and I've adopted it as well :) I always get the same reactions when I mention it...changes pretty quickly after they taste it!
