
I love making sandwiches over the weekend. It's fun to use whatever is left over from the week and to come up with some different combinations. This one is a favorite of mine because of how tasty it is and how easy it is to prepare. I'd recommend eating it right away though because the olive oil can make the baguette soggy if you wait too long!




Feta and Tomato Sandwich on Baguette
INGREDIENTS
1 French baguette
1 tomato, thinly sliced
4 ounces feta, sliced
1/2 red onion, thinly sliced
1 handful basil
olive oil
salt and pepper, to taste
DIRECTIONS
Slice baguette in half, and then lengthwise. Drizzle olive oil on both sides of sandwich. Sprinkle bottom with half of torn basil and add sliced onions. Layer feta and sliced tomatoes on top. Sprinkle with salt and pepper. I don't use much salt, since feta is already a salty cheese. Top with remaining torn basil. Cut in half and enjoy right away!

ReplyDeleteBaguettes are so fun to eat and play with - you can come up with so many different flavours! Nothing beats a classic like this recipe - although I would probably have my baguette with mozarella instead.

this totally reminds me of the most delicious sandwich i ate on while laying on a beach in the french rivera. it was tomato, feta, olive oil, sea salt, pepper, and a bunch of fresh basil on baguette. it was so simple and cost like 3 Euro from a tiny little snack shack, but was seriously the most delicious and refreshing sandwich i have ever eaten!
